ROCKY ROAD






Today we made Rocky Road to serve at the Summer party to celebrate the opening of the new SEAPIA Shack.  



Ingredients:

200g milk chocolate
200g plain chocolate
100g unsalted butter
75g mini marshmallows
100g digestive biscuits broken into small pieces
100g unsalted dried fruit and nuts of your choice (any large nuts to be chopped up small)


Mix the marshmallows, broken biscuits and fruit and nuts together in a bowl.  

Break up the chocolate and melt it with the butter in a large heat-proof bowl placed over a saucepan of barely simmering water (so that it melts without getting too hot).  Stir it with a spoon.  When the butter and sugar have melted add the contents of the other bowl and mix thoroughly to combine.

Lastly, you transfer the mixture into a shallow baking tray lined with foil (about 20cm square) pressing it down with the blade of a knife or the back of a spoon to even it out.  Cover it.

Then transfer the Rocky Road to the fridge to set and when it is hard you can cut it into pieces (not too big as it is very sweet and should be served as a treat).


Things we learnt today

We practised cooking with chocolate and learnt that it is important to melt chocolate very slowly and carefully so that it melts without overheating because if chocolate overheats it seizes up and goes into an grainy lump which you can’t then use in the recipes.



‘Rocky Road’ is a no-bake slice which first originated in Australia way back in the mid 19th century.  It is said that it was invented as a way to disguise sweets that had been imported from Europe and spoiled during the long journey, so rather than throwing them away they used to mix them with melted chocolate and locally grown nuts to make what they called ‘Rocky Road’ which is now very popular made with marshmallows, nuts, dried fruit and lots of chocolate!
